- 1 ½ cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp honey
- ¼ cup brown sugar
- ¼ cup Britannia butter, soft
- 1 egg
- ¼ cup milk
- 2 tbsp orange juice
- 1 tsp vanilla
- 2 tbsp orange zest
- ½ cup of dried apricots
- Powdered/icing sugar for dusting
How to make :
Apricot Orange Loaf Cake Recipe
- Slice the apricots into small pieces and soak them in orange juice. Set aside.
- Cream together butter, brown sugar, and honey. Add egg, vanilla essence, orange zest, and milk, beating until fluffy.
- Combine whole wheat flour, baking powder, baking soda, and salt in a separate bowl.
- Gently fold the soaked apricots into the batter.
- Pour the batter into a loaf tin and bake at 180°C for 25 minutes.
- Let the loaf cool in the tin for 5–8 minutes before transferring to a serving plate.
- Dust the loaf cake with icing sugar once the cake has cooled completely.
Special Tip
For enhanced flavour, soak your apricots in orange juice overnight.
