- ¼ cup vegetable oil
- ½ cup brown sugar
- ½ cup sugar
- 2 eggs
- 1 cup refined flour
- 1 tbsp cinnamon powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup raisins
- 1 cup grated carrot

- In a mixing bowl, add ¼ cup vegetable oil, ½ cup brown sugar and ½ cup sugar and whisk well.
- Break 2 full eggs into it and whisk again.
- Combine 1 cup refined flour and 1 tbsp cinnamon powder. Then, add 1 tsp baking soda and ½ tsp salt.
- Add ½ cup of raisins and whisk again.
- Lastly, add ½ cup of grated carrot and mix.

- Take a mould of your choice and line it up with aluminium foil.
- Pour the cake batter and tap it well to settle evenly.
- Bake at 180°C in a preheated oven for 45 mins and it's ready to serve!
Special Tip
To make this sweet carrot cake recipe a tad bit sweeter, you can garnish it with powdered sugar, milkmaid or creamy frosting
